This evenings Dinner Feature at Stonefly Café is our take on a classic European dish that we call Hunters Chicken. In France it is called Poulet Sauté Chasseur and in Italian the more commonly known Chicken Cacciatore with Chasseur and Cacciatore both translating into English as Hunter.
Both countries put their own mark upon the recipe but in its basic form it is a rustic dish of chicken, mushrooms, tomatoes, onions, and wine with seasonings and spice to the cook’s taste. Based on its association with the hunter one can imagine that at its origin game birds would have graced the pot but over the ensuing years chicken has becoming the main event.
